Use a Team or Enterprise account and have an admin turn off training for the whole organization, and do not use the thumbs up or down buttons on work chats.

Plan to approve: Mistral Team or Enterprise
Setting to check: Training turned off by an admin

A line for your AI policy: Staff use Mistral only through our company Team or Enterprise account, with training turned off by an admin. Nobody rates work chats with feedback buttons.
